Pizza, Pizza, Pizza!

Pizza is an all time favorite. DIY is cheaper and better than ordering – and way healthier!

What you need:

2 cups (280g) whole wheat flour (you can substitute with rye flour or white flour)

1 ½ cups (210g) white flour

1 package (2 1/2 teaspoons) dry yeast

1 ½ cups (360ml) warm water (not hot!)

1 teaspoon sugar

1 ½ teaspoons salt

The more often you do this, the easier it gets!

For toppings – choose what you like:

7 oz (200g) tomato sauce (less than a can, but use as much as you like)

8 oz (250g) Mozzarella cheese, shredded

6 mushrooms (white button or Portobello), sliced

2 tomatoes, sliced

½ red, yellow or green pepper, thinly sliced

Olives (black or green, halved or sliced)

5-6 salami slices (optional)

1 can tuna (in water), drained (optional)

4 tablespoons dried oregano

Salt & pepper

How to do it:

Pour warm water in a large bowl, add dry yeast and sugar, stir and let sit for 5 min

Add flours and salt slowly and keep on mixing (I use a wooden spoon).

Once all ingredients are mixed, knead the dough with your hands. This is best done on a clean kitchen surface. Add little flour to the surface, as necessary. Dough should not be sticky on your hands.

It usually takes at least 5-6 minutes of intense kneading

Once you have a smooth dough, form a ball and let it sit in a warm place for about 1.5 hours; cover with a kitchen towel.

After 1.5 hours the dough should have doubled in size, knead it again vigorously. Then start rolling with a dough roll (you can substitute with a full plastic or glass bottle); sprinkle some flour on surface if sticky, turn to the other side and roll edges; again sprinkle more flour if too sticky.

Put dough on a baking sheet.

Add your toppings: Start with tomato sauce (from the can), add oregano, little salt and lots of pepper, add shredded mozzarella cheese (this is your Pizza Margarita!), add sliced mushrooms, tomatoes, olives, tuna, salami – your choice entirely. Add another layer of Mozzarella cheese on top.

Put in oven and bake at 410 F (210 C) for 18 minutes.
