Tortellini with Tomatoes, Beef, Olives and Feta

Simple, tasty and tomato-ish comfort food with a Greek twist – all done in one pot

Preparation time: 40 minutes (including tortellini cooking, you save 15 minutes if you cook tortellini in an extra pot)

What you need:

1 package (12oz/ 340g) cheese tortellini

1 lb (500g) ground beef – optional (the dish is as delicious with veggies only)

1 medium zucchini, sliced

1 onion, chopped

3 garlic gloves, minced

1 tablespoon oil

15oz (425g) tomato sauce (ideally low-sodium)

½ cup (125)ml water (or tomato juice)

½ teaspoon chili powder (more if you like it spicier)

1 teaspoon salt

1 tablespoon paprika powder

2 tomatoes, chopped

½ cup (80g) feta cheese

½ cup (100g) black olives, pitted and halved

2 tablespoons fresh herbs (cilantro, parsley, basil), chopped

How to do it:

Cook tortellini in a large pot according to package directions. Drain, add some olive oil and set aside

Use same pot, add oil and cook onions until translucent, add garlic and cook for another minute

Add beef and cook until it’s done, add zucchini and cook over medium heat for another 2 minutes

Add chopped tomatoes to the pot and cook for 1 minute, add tomato sauce and stir well. Add salt, chili and paprika powder and stir.

Add cooked tortellini and mix carefully with the meat/tomato/onion sauce, reduce heat and let simmer for 3-4 minutes.

Add olives and stir carefully.

Serve on plates and sprinkle feta on top.
