Peach Cobbler

Summertime is peach time in many parts of the world. This is a simple dessert – delicious and juicy. Served with ice cream, it’s perfect for a hot summer day

What you need:

6 large peaches, peeled and sliced

¼ cup (50g) sugar (granulated)

Juice of ½ lime (or lemon)

½ teaspoon cinnamon

Pinch of salt

For the topping:

 1 ¼ cups (180g) white flour (you can also mix white and whole wheat flour)

1 cup (200g) brown sugar

¼ teaspoon salt

½ teaspoon cinnamon

½ cup (1 stick; 125g) soft butter (not melted)

Vanilla ice cream, for serving

How to do it:

Preheat oven to 375F (190C)

In a large bowl, combine peaches, sugar, lemon juice, cinnamon and salt. 

For the topping, combine flour, brown sugar, salt, and cinnamon. Cut butter in small pieces and add to the mix. Combines everything with your hands until the mixture turns into coarse crumbs. 

Put peaches and juices into a baking dish  – I use a 9X9 inch (24X24 cm) form.

Sprinkle crumbs evenly over peaches.

Bake until topping is golden and peaches are bubbling, about 30-35 minutes.

Serve warm with ice cream, if desired.
