Collard greens are a common staple in many regions across the world – from West Africa to Brazil, the Southern United States and Europe. They are quickly done, full of power nutrients and a super healthy side dish. These ones are spiced up with chili, flavored with lime and crunchy with sesame.
Preparation time: 15 minutes
What you need:
1 bunch of collard greens – you can substitute with spinach or kale
1 tablespoon olive oil
1 garlic clove, minced
½ teaspoons salt
chili flakes
sesame seeds (toasted)
juice of 1 lime
How to do it:
If you use collard greens or kale, cut the thick central ribs out, stack the leaves on top of one another and slice them, ideally ½ inch (1 cm) wide.
Heat olive oil over medium to low heat, add the greens and the salt and stir well.
Stir every 30 seconds and let some of the leaves turn brown and crisp on the edges.
Add garlic and stir for another 30 seconds
Drizzle with a bit of fresh lemon juice and sprinkle with chili flakes and sesame seeds.
