Clafoutis

This French dessert is delicious and very quick and easy to prepare. Clafoutis is similar to a custard or flan, mixed with any fruits you like. It’s perfect for a brunch or an easy dessert.

Preparation time: 10 minutes (+ 35 minutes for baking)

What you need:

3 eggs

 ½ cup (100g) sugar

 ½ cup (70g) flour

 2 tablespoons (28g) butter, melted

 1 1/4 cup (300ml) milk (use whole milk)

 1 teaspoon vanilla extract

 1 ½ cups (about 300g) berries, or other fruit (blueberry, raspberry, mango, peach are all great)

 Powdered sugar, to sprinkle on top

How to do it:

Preheat the oven to 350°F (180°C). Butter a 9-inch (22cm) pie baking form. Best to use a deep dish as the batter will rise during baking.

In a bowl, mix eggs with sugar and vanilla extract. Add flour and mix until smooth and lump free. Add melted butter. Make sure that the mixture is completely smooth.

Pour batter into baking form. Scatter fruit onto the batter.

Bake for 35-40 minutes until the batter is just set and golden at the edges.

Let cool slightly. Sprinkle with powdered sugar and serve.
