Yogurt-Berry Parfait

This is a super healthy and easy version of a parfait – with just yogurt, a bit of cream and fresh fruit. A perfect breakfast or dessert for a hot summer day.

Preparation time: 20 minutes

What you need:

1lb (500g) Greek yogurt (use plain or vanilla flavor if you like it sweeter)

4 tablespoons honey (more of you like it sweeter yet)

1 teaspoon cinnamon

4oz (100ml) whipping cream; not whipped

1lb (500g) fresh berries (strawberries, raspberries, blueberries); quarter the strawberries

100g chopped pecan (you can substitute with almonds)

4 oz (100g) butter cookies, crumbled

How to do it:

Mix Greek yogurt with honey, cinnamon and sweet cream

Crumble the butter cookies and distribute evenly in six glasses

Put 2-3 spoons on the yogurt mixture on top

Add a layer of mixed fruit

Sprinkle some pecan/almonds on top

Add another layer of yogurt, then another layer of fruit

Top with remaining pecan

Enjoy!

You can prepare this ahead of time and keep cool in the refrigerator. Take out 20 minutes before serving.
