Thai-inspired Beef and Broccoli in Coconut Sauce

This is a super easy and quick dish which tastes better than your regular Thai take out. Use beef or chicken or go veggie only – whatever you prefer. The coconut sauce and the brown sugar give it a rich and flavorful taste.

Preparation time: 35 minutes

What you need:

1 ½ cups (about 100-130g) broccoli florets

1 cup snow peas

1 cup mushrooms, quartered

1 onion, chopped

2 green onions, thinly sliced

1 pound (500g) beef, thinly sliced (you can substitute with chicken)

Salt & pepper to taste

1 tablespoon oil

3 tablespoons fresh ginger, peeled and finely chopped

1 ½ tablespoons Thai red curry paste

1 tablespoon fish sauce (optional)

1 tablespoon brown sugar

1 can (14oz/ 400ml) coconut milk

¼ cup (40g) cashews, more if you like

How to do it:

Slice beef thinly and season with a bit of salt and pepper, set aside.

Heat oil over medium heat and cook onions until translucent, about 5 minutes.

Add beef, ginger and garlic and cook for about 3-4 minutes

Stir in red curry paste, fish sauce, brown sugar, a pinch of salt, and coconut milk and mix well.

And broccoli, snow peas and mushrooms and let simmer until it thickens up – about 4-5 minutes. Make sure the broccoli doesn’t overcook.

Add more chili and salt according to your taste and mix in the cashews.

Sprinkle green onions on top and serve over rice – Jasmin rice is best.
