Sauteed Shiitake Mushrooms

This is a very easy and quick side dish giving shiitakes a savory, delicious flavor highlighted by sesame oil and the tangy-sweetish taste of balsamic vinegar. Can be serves as a side dish or turned into a main dish by serving with pasta.

For the picture I added Spicy Greens, a few cherry tomatoes and some feta which makes a nice light lunch or dinner.

Preparation time: 15 minutes

What you need:

1 lb (500g) shiitake mushrooms (you can also use other mushrooms)

1 tablespoon sesame oil

2 tablespoons balsamic vinegar

How to do it:

Remove the stems from the mushrooms and discard. Slice the larger mushroom caps in half and keep smaller mushrooms whole.

Heat the sesame oil in a large skillet over medium heat. Add the mushrooms and cook for 3 minutes, stirring occasionally. You can add a pinch of salt, but I don’t think it’s necessary.

Once browned on all sides, add the balsamic vinegar and cook for another 3 minutes at low heat until dark brown and glossy. Serve immediately.
