This traditional French family dessert is perfect, refreshing and light to serve in summer after a nice meal. Or just have it in the afternoon with whipped cream or ice cream on the side. It’s irresistible whenever served.
Preparation time: 30 minutes (+25 minutes baking)
What you need:
For the dough (pâte sablée):
1 ¼ cups (200g) white all-purpose flour
1 stick/8 tablespoons (110g) soft butter
½ cup (100g) sugar
1 egg
1 pinch of salt
For the topping:
3 lemons, freshly squeezed (you can alternate with 4 limes – also delicious!)
3 eggs
¾ cup (150g) sugar
How to do it:
For the dough:
Mix flour, sugar and salt in a bowl
Add the soft butter and the egg and mix everything with your hands until you have a well blended dough. Make sure you don’t overwork the dough!
Make a ball with the dough, wrap it in plastic and keep it in the fridge until using
For the topping:
Preheat oven to 350F (200C)
In a medium bowl mix the lemon juice, eggs and sugar until you get a bit of a thicker consistency
Assemble the tart:
Take the dough out of the fridge and add it to a tart pan or quiche form and ease it into place forming a nice edge. Shaping is very easy with this dough.
Poor the filling over the dough
Bake in the preheated oven for about 25 minutes (it’s ready when the edges of the tart are lightly browned.
