This is a delicious and super easy cake for late summer and fall made with fresh plums and a nice buttery flavor. Perfect for afternoon tea or as a dessert.
Preparation time: 30 minutes + 35-40 minutes baking
What you need:
1 lb (500g) plums
1 cup (125g) white flour
1 teaspoon baking powder
1 stick (112 oz/120g) soft butter
1 pinch salt
2/3 cup (140g) white sugar
2 eggs
2 tablespoons cane sugar
½ teaspoon cinnamon
How to do it:
Preheat oven to 350 F/180 C
Wash plums and destone. If you are using European plums, halve them. American plums tend to be larger, so it’s better to quarter them.
Using a handheld mixer or a kitchen machine, combine the butter with the white sugar and salt and mix for 2 minutes.
Add eggs and mix for another minute
Add flour and baking powder gradually and mix for another 2 minutes until you have a nice smooth dough.
To prevent the baked cake from sticking to the form, it’s helpful to add a thin layer of flour on the buttered form. Add the dough to the buttered and floured form.
Distribute the plums evenly on top of the dough with the cut side up.
Mix the cane sugar with the cinnamon and sprinkle over the plums
Bake the cake for 35-40 minutes until golden brown on top.
Let it cool for 30 minutes before removing the form.
Serve plain or with whopped cream or ice cream.
