Tortellini with Shrimp

This is a quick and easy meal combining cheese tortellini with shrimp in a creamy sauce flavored with garlic, chili flakes and Parmesan.

Preparation time: 25 minutes

What you need:

12 oz (350g) cheese tortellini (fresh is best)

1lb (500g) large shrimp, peeled and deveined

2 tablespoons olive oil

2 green onions, chopped (white and green parts)

3 garlic cloves, minced

7 cherry tomatoes, quartered

½ cup (120g) heavy cream

¼ cup (30g) grated Parmesan cheese

½ teaspoon red pepper flakes (more if you like it spicy)

Salt and pepper, to taste

½ lemon, juiced

4 tablespoons fresh parsley, chopped

How to do it:

Cook the tortellini according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side, until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the chopped onions and minced garlic and sauté for about 1 minute, until fragrant. Add tomatoes and cook for another 1-2 minutes.

Pour in the heavy cream and bring to a gentle simmer.

Stir in the Parmesan cheese, 3 tablespoons chopped parsley, red pepper flakes and cook for 2-3 minutes until the sauce thickens slightly.

Add the cooked tortellini and shrimp back into the skillet. Toss everything together until well coated. Adjust seasoning with salt and pepper if needed.

Serve immediately and top with the remaining fresh parsley.
