Pork with Dates and Green Olives

This is sophisticated and yet easy comfort food at its best. The heartiness of the spiced meat combined with the sweet dates and the savory olives make this a tasty and yummy dish – all done in one pot.

Preparation time: 35 minutes

What you need:

1lb (500g) pork meat, cut into chunks (you can substitute with beef or chicken)

5 garlic cloves, minced

1 large onion, thinly sliced

20 dried and pitted dates, halved

¾ cup (100g) green olives

2 tablespoons olive oil

1 teaspoon salt

¼ teaspoon chili powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon paprika powder

1 teaspoon Kefta spice blend (optional)

4 tablespoons fresh cilantro or parsley, chopped

¼ cup (60ml) balsamic vinegar

¾ cup (180ml) water

How to do it:

Heat oil over medium heat in a medium-large pot. Add meat chunks and fry for about 10 minutes, moving the pieces a little bit around.

Add the sliced onion, stir with the chicken and let it cook for another 3-4 minutes

Add garlic and cook for another minute or so

Add salt, all spices, vinegar and water, mix well and let simmer at low heat for 10 minutes

Add olives, dates and fresh cilantro, stir everything and let simmer for another 5 minutes, add additional salt or spices until you like it.

Serve with white rice or couscous.
