This is an easy and super quick stir fry with shrimp and crunchy bok choy – full of fiber, vitamins and antioxidants. Tasty and healthy!
Preparation time: 15 minutes
What you need:
1lb (400-500g) bok choy (baby bok choy is perfect because you don’t have to cut it)
1 tablespoon oil
2 tablespoons fresh ginger, minced
3 garlic cloves, minced
½ lb (250g) raw shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon brown sugar
2 teaspoons rice vinegar
½ teaspoon chili flakes
How to do it:
Trim the ends of the bok choy. Wash, pat dry with paper towels, cut into bitable pieces, set aside.
Heat oil in a large skillet or wok over medium-high heat. Add the ginger and cook for 1 minute, then add the garlic and cook for another minute.
Add the shrimp and cook for about 1 minute until they are seared and cooked through.
Reduce heat to medium-low and add the soy sauce, brown sugar, and rice vinegar, cook for 1 minute. Stir in the bok choy and cook for 1-2 minutes (it should still be a bit crunchy).
Serve with white or brown rice and sprinkle with chili flakes.
