Orange-Honey Cake

This fragrant, delicious cake is perfect for morning coffee, afternoon tea or as a dessert.  It’s made with orange zest, yogurt and almond flour making the cake flavorful and very moist.

Preparation time: 40 minutes (+40 minutes baking)

What you need:

1 stick (4 oz/113 g) soft butter

1 ½ cups (180 g) white flour

¾ cup (85 g) almond flour

1 ½ teaspoons baking powder

¼ teaspoon salt

½ cup (100g) sugar

1 tablespoon finely grated orange zest (from 2 oranges, organic is best)

2 eggs

½ cup (160 g) honey

1 cup (220 g) plain yogurt

4 tablespoons fresh orange juice (pressed from the oranges)

For the topping:

2 tablespoons butter

1/3 cup (100 g) honey

1 ½ teaspoons orange zest

2 tablespoons orange juice

How to do it:

Preheat to 350 F (190C). Butter a non-stick loaf pan and add a thin layer of flour (this will help remove the cake after baking).

In a medium bowl, whisk together flour, almond flour, baking powder and salt.

In another bowl, using a hand mixer, mix butter, sugar and orange zest on medium-high speed until fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition.

Reduce the mixer speed to medium, add the honey and yogurt and combine everything.

Using a rubber spatula, gently fold in the dry ingredients from the other bowl. It’s best to do this in 2-3 batches until everything is thoroughly mixed. Do not whip the batter to keep the fluffy consistency.

Put the batter into the loaf pan and smooth the top. Bake for about 40 minutes, or until the cake is deep golden. The cake is ready when you can insert a wooden or metal stick into the middle of the loaf and it comes out clean.

When done, remove the cake from the oven and let it cool for about 10-15 minutes.

Topping:

Meanwhile, make the topping. In a small saucepan melt the butter over low heat. Drizzle in the honey and zest and mix everything. Remove from the heat and stir in the juice.

While the cake is still warm, brush half the glaze over the cake. Remove the cale from the baling form and top it with the remaining glaze when cooled.

Slice and serve. Add vanilla ice cream if you feel like it.
