This quick and easy dessert is bursting with sweet, juicy flavor — perfect as a light treat after a meal or a delicious addition to any brunch. Simple to make and truly delightful!
Preparation time: 15 minutes
What you need:
8-10 fresh apricots, destoned, and quartered
1 tablespoon sesame oil
4-5 tablespoons maple syrup (you could substitute with honey, but use less as honey is sweeter)
½ cup plain yogurt (use full fat)
3-4 tablespoons roasted nuts (cashew, walnuts, pistachio), coarsely chopped
How to do it:
Roast nuts in a pan at medium heat for 2-3 minutes, until lightly browned. Remove from the pan and set aside
Heat sesame oil in the same pan, add the apricots, and sauté for 2–3 minutes until they soften and begin to brown. Drizzle with 2 tablespoons of maple syrup, flip, and cook for another minute until lightly caramelized.
Remove the apricots from pan and spread on a serving platter. Top with yogurt and add 2 more tablespoons of maple syrup on top.
Sprinkle roasted nuts on top and serve warm.
