Spicy White Bean and Sweet Potato Stew

This cozy, flavorful veggie stew balances sweet potatoes with warm spices, orange and lime.  Hearty beans and tomatoes make it deeply comforting and perfect for a cold winter day. Easily done in one pot!

Preparation time: 40 minutes

What you need:

1 large onion, chopped

2 tablespoons veggie oil

Salt & black pepper

6 garlic cloves, minced

1 tablespoon brown sugar

2 teaspoons ground cumin

2 teaspoons ras-el-hanout spice

1 teaspoon coriander powder

1 teaspoon paprika powder

½ teaspoon crushed red pepper

¾ cup orange juice

2 medium sweet potatoes, peeled  cut into 1-inch (2 cm) pieces

2 (14 oz/400g) cans white beans, drained (or cook dried beans which takes about an hour)

1(14 oz/400g) can crushed or diced tomatoes

1 lime, juiced

How to do it:

In a large pot, heat oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for another minute, stirring frequently.

Add the sweet potato pieces and ¼ cup water and let cook for 4 minutes. Reduce to low-medium heat, add the brown sugar, all spices and orange juice and let it come to a simmer. Add tomatoes, 1 cup of water and season with salt and pepper. Taste it to make sure it’s balanced, adding more if needed.

Cook the stew at low heat for about 30 minutes or until the sweet potatoes are soft (but not mushy). Add the beans, stir carefully and let it cook for another 5 minutes or until the beans are warm. Add the lime juice. Taste and see if more salt and pepper is needed.

Divide in soup bowls and serve hot.
