This is a super easy and pleasing recipe – all done in one pot!
Preparation time: 20 minutes
What you need:
1 tablespoons olive oil
1 large onion, chopped
6 garlic cloves, chopped
14 oz. (400g) fresh tomatoes, diced (you can substitute with 1 can)
1/2 cup (125g) tomato sauce
2 cups (500ml) chicken or veggie broth
8 oz (250g) spaghetti (or any other pasta depending on the size of your pot)
1 teaspoon salt or to taste
1/2 cup (10g) chopped herbs (basil, parsley cilantro) (optional)
1/4 cup (25g) grated Parmesan cheese (optional)
1/4 pound (125g) shrimps (optional)
salt & pepper, chili powder
How to do it:
Heat oil in a large pot over medium heat. Add the onion and garlic, sauté until golden.
Add tomatoes, chicken broth and spaghetti. Add salt and pepper and a bit chili
Press the spaghetti with a spatula to submerge the pasta in the liquid. If your pot is not wide enough, break the spaghetti into halves before cooking.
Cover with the lid and reduce heat to medium-low. Cook for 8 minutes or until the pasta is al dente. If the pasta is not cooked after 8 minutes, add a little bit more chicken broth or water, cover the lid and cook for another 1 to 2 minutes.
While the pasta is cooking, peel shrimps and saute in olive oil (or butter) at medium -low heat until they turn pink. Add pepper.
Uncover the lid and taste whether more spices are necessary. Turn off the heat.
Top the pasta with the shrimps and parsley and/or the Parmesan. Serve immediately.
