Matar Paneer

Easy and delicious Indian veggie dish with peas, tomatoes and paneer or tofu

Preparation time: 25-30 minutes

What you need:

1lb (500g) paneer, cubed (you can substitute with firm tofu)

4-5 tablespoons sesame oil

2 cups (300g) green peas (can be frozen)

1 large onion, chopped

4 garlic cloves, chopped

1 green chili, deseeded and finely chopped (optional)

1 inch (2 cm) ginger root, peeled and finely chopped

1 can (14 oz/400g) diced tomatoes or fresh tomatoes (low salt)

1 teaspoon salt

½ teaspoon turmeric

1 teaspoon coriander powder

1 teaspoon garam masala

½ teaspoon chili powder (or more depending on your spice level)

How to do it:

Pat paneer/tofu dry on paper kitchen towel, cut it into small cubes, sprinkle with garam masala, add 3-4 tablespoons of sesame oil and toss gently; let sit in the fridge for ay last 20 min (and up to several hours)

Heat 1 tablespoon sesame oil at medium heat, add onion and garlic and sauté until onions are golden.

Add chopped ginger, tomatoes, salt and all spices and bring to a boil, reduce heat and let simmer for 5 minutes.

Add peas and tofu/paneer, toss gently. Add a bit of water or tomato juice if you want it more liquid. let it cook at low heat for another 10 minutes and have the flavors cook in.

Taste it and add more spices and salt until you like it!

Serve with basmati rice!
