Veggie Tart

Perfect for dinner or brunch, this is a version of the French quiche made with veggies of your choice – you can literally use any vegetables for this easy and versatile recipe.

Preparation Time: 1 hour, 15 minutes (with baking)

What you need:

Dough:

1 ½ cups (200g) flour

2 teaspoons baking powder

½ teaspoon salt

6 tablespoons (85g) butter

6 tablespoons milk

Mix all ingredients and knead with your hands into a firm dough. Set aside.

Filling:

1 tablespoon oil

1 teaspoon turmeric

1 teaspoon cumin

1 teaspoon salt

½ teaspoon pepper

1 small onion, chopped

1 zucchini, sliced and quarters

2 medium carrots, chopped

Some peas (frozen) if you like

2 eggs

½ cup (125g) plain yogurt

½ cup (50g) parmesan, grated

How to do it:

Heat oil and cook onions until translucent

Add carrots and cook for 3 minutes until soft, add zucchini and cook for another 2-3 minutes, add frozen peas

Mix all vegetables and add turmeric, cumin, salt and pepper; turn off heat

Put dough into quiche/tart baking form, press with your hands so it fills the entire form, lift margins a bit (you can also roll dough on a flat kitchen surface and then put it into the form)

Put all vegetables on dough and spread out evenly

Mix eggs and yogurt in a small bowl; add a little salt and pepper

Spread evenly over the vegetables

Grate some parmesan on top

Bake for 30-35 minutes at 360 F (200 C) until top is golden
