Easiest Oatmeal Cookies

These are the easiest oatmeal cookies ever. Delicious, chewy, quick to make and perfect for sharing!

Preparation time: 25 minutes (including baking)

What you need:

1 cup (120g) white wheat flour

½ teaspoon baking powder

1 small teaspoon salt

½ teaspoon ground cinnamon

⅔ cup (150g) butter, melted and slightly cooled

½ cup (100g) brown sugar

½ cup (100g) white granulated sugar

1 large egg

1 teaspoon vanilla extract (or 2 teaspoons vanilla sugar)

2 cups (160g) old-fashioned oats

How to do it:

Preheat oven to 350°F (200 C).

In a mixing bowl, whisk together the flour, baking powder, salt, and cinnamon.

Add the melted butter, egg, brown sugar, white sugar and vanilla extract/sugar to the bowl and mix everything. This is easily done by hand, but you can also use a mixer.

Add the oats and mix until evenly distributed.

Add a tablespoon of batter on a non-stick baking sheet, spacing each cookie about 2 inch/4cm apart.

Bake for about 10 minutes, or until lightly browned in top.

Remove from the oven and place on a cooling rack to cool for about 10 minutes.

Enjoy with tea, coffee or milk! They are best when fresh out of the oven and still warm, but you can keep them for several days in a plastic bag.

    1. Hi Ann, many thanks for noticing the typo. It’s baking powder that’s needed. Have corrected in the instructions.

    1. Hi Nancy, this is a rather personal and certainly not a commercial blog so nutritional values are not indicated. But let me say that while these cookies contain oatmeal, they also have sugar and butter. At least you know exactly what’s in them which is not always the case when you purchase cookies.

    1. Thanks for trying the recipe! Oat flour is certainly a good substitute – and so is almond meal which I have also tried o make these cookies. All great variations!
