Made with sun dried and fresh tomatoes, this pasta is a super easy and quick recipe for busy people. You can use any pasta you like and easily scale it up and invite friends over.
Preparation time: 20 minutes
What you need:
16oz (500g) penne (or any other pasta)
1 tablespoon oil (use the oil from the dried tomatoes)
4 garlic cloves, minced
1 large onion, chopped
1 teaspoon red pepper flakes (more if you like it spicier)
2 teaspoons paprika powder
1 teaspoon salt
One 8oz (240g) jar sun dried tomatoes, drained of oil and roughly chopped
2 large fresh tomatoes
6 tablespoons tomato sauce
½ cup (120g) plain yogurt
1/3 cup (30g) grated Parmesan (optional)
How to do it:
Cook the penne in salted water according package instructions; drain of water when done
Heat the oil in a large pot over medium heat, add inions and cook until golden, about 3-4 minutes, add garlic and cook for another minute while stirring.
Add ¼ cup (60 ml) water, red pepper flakes, salt, paprika powder and stir for about 30 seconds.
Add the fresh tomatoes and sauté for another 2 minutes; add dried tomatoes and the yogurt and cook everything on low heat for another minute. Taste and add more red pepper flakes or salt if needed.
Put pasta back into the pot in which you cooked them; pour tomato mix over the pasta and mix carefully.
Fold in the Parmesan
Garnish with parsley and additional cheese before serving.
