This is a very popular Indian dish combining spinach, potatoes and spices. It’s easy to make, healthy, nutritious and vegan!
Preparation time: 30 minutes
What you need:
1 tablespoon oil
1 medium onion, chopped
4-5 garlic cloves, minced
½ teaspoon cumin powder
½ teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon garam masala
¼ teaspoon chili powder (more if you like it spicier)
1 lb (500g) potatoes, peeled and cut into 1inch (2.5cm) cubes (I prefer firm cooking potatoes, but you can use any)
1 teaspoon salt, more to taste
6 cups (200g) fresh spinach (finely chopped); you can substitute with frozen spinach
½ lemon, juiced
How to do it:
Heat oil in a large pot over medium-high heat. Add chopped onions and cook until transluscent about 3-4 minutes; add garlic and cook for another minute.
Reduce heat to medium and add chopped potatoes and 3-4 tablespoons of water. Add cumin, turmeric, coriander, garam masala, chili powder and salt. Stir to combine.
Close the lid and let potatoes cook for 7 to 8 minutes until almost done. Add more water, if necessary, the potatoes should not stick to the bottom of the pot. Open lid now and then and stir.
Add the chopped spinach slowly, stir after each addition until the leaves wilt. Once all of the spinach is in the pot, cook everything Cook for 3 to 4 minutes after adding all the spinach.
Squeeze in lemon juice and mix. There shouldn’t be any water left at this point. Taste for salt and chili and adjust to your liking.
Serve with rice, chapati or flatbread.
