Tomato-Strawberry Caprese

Perfectly light and simple summer appetizer adding sweet strawberries to the classic caprese dish.

Preparation time: 15 minutes

This recipe is for just 2 people, double for 4, triple for 6

What you need

1 mozzarella round (125g/4.4oz), sliced

1 handful arugula

5-6 large strawberries, cut into small pieces

10 cherry tomatoes, halved

4 turns fresh pepper from the pepper mill

2 tablespoons olive oil

2 tablespoons balsamic vinegar (alternatively you can use a sweet fruit vinegar such as mango or raspberry)

How to do it:

Place arugula on a plate

Top with mozzarella slices (the slices should overlap a bit)

Distribute strawberry pieces and tomatoes on top of the mozzarella

Season with fresh pepper

Top with olive oil and vinegar

Serve with crusty baguette
