Cold Cucumber Soup

Refreshing, delicious and healthy – this is the perfect dish for hot summer days. The combination of cucumbers, herbs and yogurt is simple, but flavorful. No oven needed, but a good blender and a fridge.

Preparation time: 20 minutes (+ chilling)

What you need:

2 cucumbers (any kind), halved and sliced (no need to deseed, don’t peel)

1 ½ cups (350g) plain yogurt (regular or Greek; using Greek yogurt will make the soup a little thicker)

1 lime, juiced

1 green onion, sliced (green and white parts)

1 garlic clove

1 small bunch dill

1 small bunch parsley

Salt & pepper

How to do it:

In a blender, combine half of the chopped cucumbers and green onion and blend until smooth. Add the remaining cucumbers, lime juice and garlic and blend again until smooth.

Add yogurt, dill, parsley, salt and pepper and blend again until smooth. Depending on the size of your blender you may have to do this in batches and combine everything at the end.

Refrigerate for a few hours and serve cold. You can also pop in a few ice cubes when serving if the soup isn’t fully cold.
