Simple Savory Noodles

This is a lazy recipe for a quick and easy lunch or dinner that comes together in just 15 minutes. Noodles, fresh greens, and crunchy peanuts are tossed in a savory-sweet sauce for a simple, satisfying meal that’s delicious warm or cold.

Preparation time: 15 minutes

What you need:

2 oz (340g) dried wheat noodles (I like udon)

1 tablespoon sesame oil

3 green onions, thinly sliced

2 garlic cloves, minced

3 cups greens (spinach, kale, Asian cabbage, bok choi), chopped

Fresh black pepper

3 tablespoons low-salt soy sauce

1 tablespoon fish sauce

1 teaspoon honey

4 tablespoons unsalted peanuts, roughly chopped

Chili flakes

How to do it:

Bring a pot of water to a boil for the noodles. Boil noodles according to the package directions.

Meanwhile, heat a large pan (or wok) over high heat, and add a tablespoon of sesame oil. Add the sliced green onion and garlic and cook for 1-2 minutes until fragrant.

Add the greens and the peanuts, stir with the garlic and green onions and cook at medium-high for about 5 minutes, or until the harder stems soften. Season with fresh pepper.

In a small bowl, mix the soy sauce, fish sauce and honey.

Drain the noodles and toss with greens and the peanuts. Add the sauce and mix everything.

Sprinkle with the chili flakes and serve warm or cold.

Enjoy!
