Miso Ginger Broccoli Salad

This fresh Miso Ginger Broccoli Salad is simple to prepare and perfect for hot summer days—or as a flavorful side dish any time of year. Enjoy it warm or chilled for a nourishing, satisfying dish packed with flavor.

Preparation time: 20 minutes

What you need:

4 Green onions, thinly sliced (white and green parts)

2 tablespoons sesame oil

1 tablespoon low-sodium soy sauce

1 tablespoon fresh ginger, peeled and finely grated

1 tablespoon white miso

2 tablespoons of roasted sesame seeds

Salt and pepper

1 lb (500g) broccoli florets, cut into 2-inch (4cm) pieces

8-10 small grape or cocktail tomatoes, quartered

How to do it:

Bring a medium pot of water to a boil. 

Meanwhile, in a large bowl, combine the scallions, oil, soy sauce, ginger and miso; season with salt and pepper. Whisk until well combined.

Add broccoli to the boiling water and cook until bright green and slightly softened, about 2 minutes.

Drain well, using a colander. Transfer broccoli to a paper towel-lined plate and drain for 5 minutes to eliminate any excess water.

Add broccoli to the large bowl with dressing, add tomatoes, season with salt and pepper and toss until evenly coated.

Sprinkle with sesame seeds and serve warm or cold. Both options are delicious.
